State records give us a clearer picture of the project.

 

The Texas Department of Licensing and Regulation lists a $500,000 renovation at 409 N. Mays St. covering approximately 2,812 square feet. The work includes remodeling the existing building for restaurant dining space and adding a kitchen, tortilleria and storage.

 

The state filing lists construction running through early December 2026.

 

So, What Exactly Is Nixtamal?

If “nixtamal” isn't already part of your dinner vocabulary, Casa Masa may give you a reason to learn it.

 

Nixtamalization is a traditional process in which dried corn is cooked and soaked in an alkaline solution before being washed and ground into masa. It has been used in Mexican and Central American cooking for centuries.
