From Queens to Round Rock: Eggman Celebrates Its Newest Location

ROUND ROCK, TEXAS — August 19, 2026 — Round Rock’s breakfast scene gets an official welcome today as Eggman ATX celebrates its Round Rock locationwith a Round Rock Chamber ribbon cutting at 11:00 a.m. at 300 Harrell Parkway, near Old Settlers Park and Dell Diamond.

The locally owned breakfast business brings New York City-style breakfast sandwiches to Round Rock, with made-to-order eggs, meats, cheese and signature sauces served on Kaiser-style rolls.

Round Rock breakfast lovers have a new reason to rethink the morning taco.

Eggman, the Central Texas food truck known for New York City-style breakfast sandwiches, is celebrating its Round Rock expansion with a Round Rock Chamber ribbon cutting Wednesday, August 19, from 11 a.m. to noon at 300 Harrell Parkway.

The bright red food truck isn’t brand-new to town—it quietly opened near Old Settlers Park on May 15—but Wednesday’s ribbon cutting officially celebrates Eggman’s fourth Central Texas location and its first expansion outside Austin.

And there’s a story behind those eggs.

From Queens Breakfasts to a Texas Food Truck

Founder Richard “Rich” Tavetian grew up in Queens, New York, where grabbing a bacon, egg and cheese sandwich on a roll from a neighborhood deli, food cart or bodega was simply part of everyday life.

Years later, while visiting Austin for business, Tavetian noticed something missing from the city’s breakfast landscape.

Texas had no shortage of excellent breakfast tacos, but finding the kind of New York-style breakfast sandwich he remembered was another matter.

Eventually, he decided to make his own.

Eggman began in March 2024 as a small Austin food trailer focused on made-to-order breakfast sandwiches, coffee and the experience of a New York breakfast stop—with a little Texas hospitality mixed in.

Tavetian initially worked from the trailer himself before the business grew into a team and multiple locations. 

Now that expansion has reached Round Rock.

What Makes an Eggman Sandwich Different?

The menu centers on straightforward breakfast ingredients—eggs, bacon, sausage, steak and cheese—but Eggman puts its own spin on them.

One important difference is the bread.

Sandwiches are served on a custom Kaiser-style roll baked specifically for Eggman, a nod to the rolls traditionally used for New York bodega breakfast sandwiches. The company also makes its own sauces.

Among the menu choices are:

·       Bodega Classic: bacon, eggs and cheese with Eggman sauce

·       Queens Boulevard: sausage, eggs and cheese with Eggman sauce

·       The Big Mess: bacon, sausage, extra cheese and sauce

·       Bronx Bomber: steak, eggs and cheese with Eggman sauce

Eggman also offers coffee, drinks, sides and catering.

Why Round Rock?

The Round Rock location sits at the edge of Old Settlers Park, close to Dell Diamond and Kalahari Resort, giving it an interesting mix of neighborhood residents, commuters, sports families and visitors moving through one of Round Rock’s busiest recreation areas.

It’s also another example of a growing Central Texas business choosing Round Rock for its next chapter.

Eggman’s original Austin trailer opened only in 2024. Just over two years later, the company has grown to four locations, with Round Rock becoming its first step outside Austin.

For Round Rock residents, that means something decidedly different has joined the local breakfast menu.

Breakfast tacos aren’t going anywhere—and nobody needs that kind of trouble—but now they have a little competition from Queens.
